Effects of not having a choke plate on my carb?

My carb is off of a 350 1979 GMC truck but right now its on my 305 or 350 '84 Trans Am. It has a hard time starting in the cold, probably about 40 pumps to get it to idle. So I looked at the carb and noticed the choke plates, the electric heat sensor, and all the levers for it are gone. As you can imagine I can't buy choke plates and the chances of me finding them are almost zero. What effects would not having choke plates effect gas mileage, the health of it, acceleration, etc. I'm trying to decide if I should get a new one because the carb works great other than that. Thanks.

I am surprised you can get it to start in the cold. You will in addition have a sluggish or hesitation on cold acceleration. If your battery is not at its best condition the extra cranking may leave you stranded one cold night.

If you can not find OEM parts to repair it (and I believe you can from a junk yard) you can try a manual choke and install it. You would "pull" the choke when cold and "push" it to open when warm.
