i wanted to get this bike off craigslist, but does it seem really old and outdated?

You are correct that the equipment seems quite outdated. But that's to be expected with older mountain bikes. The industry has made huge improvements in mountain biking equipment over the past 10 years, so even a top-of-the-line model from 10+ years ago would be pedestrian today. (Note, the bike listed in the question wasn't "top-of-the-line" when first sold.)
If your goal is to do some fairly serious mountain biking, I recommend you look at a new bike from the lower end of a major manufacturer's range. Trek, Cannondale and Specialized are all good brands.
If, on the other hand, you're just looking for a bike to cruise around on--no serious trails etc.--and if the bike you're seeing on Craigslist is in good condition, there's nothing wrong with buying it. Whilst you should be able to easily obtain replacement parts for most everything, the fork (Judy air) may have to be replaced if it gives up the ghost. A quick look at the dealer's spare parts catalog http://www.sram.com/_media/techdocs/2010%20RockShox%20SPC_Rev%20C%20(Rev%20C%20price%20list).pdf for SRAM (they now own the Rock Shox brand) does not list any spares for any Judy fork, from any year.
